Baked Spinach Pancakes

Pancakes are always a delight to eat. Especially if they are alsohealthy, easy to make, and have less calories in them. These kinds offood are always a great way to deal with obesity because they’refilling, and the energy from them isn’t a lot and can be easilyexpended. Here’s the recipe for this delicious pancake

  • 100 Cup Spinach
  • 50 Gms Wheat flour
  • 1/2 Tsp Ghee
  • 100 ml Milk

For vegetables

  • 1 Cup Mixed vegetables (carrot, beans, capsicum, cabbage)
  • 1 Onion (chopped)
  • 1 Tsp Chilli powder
  • 1/2 Tsp ghee/ butter

For the tomato gravy

  • 1 Cup Tomatoes
  • 1 Onion (chopped)
  • 2 cloves Garlic
  • 1 Tsp Chilli powder
  • 1/2 Tsp Oil

For the pancakes

  1.  Put the spinach to cook with very little water. When cooked, blend ina liquidiser. Mix the flour, ghee, salt and milk.

  2. Add half of the spinach puree and mix well. Prepare pancakes on a non-stick frying pan using a little ghee.

For the vegetables

  1.  Heat the oil and fry the onion and garlic for 1 minute. Add thetomatoes and chilli powder and cook until soft. Blend in a liquidiser.

How to proceed

  1. Spread a little tomato gravy on the bottom of a greased baking dish.Put a pancake in the dish, spread some vegetables and a little gravy ontop. Repeat and build up layers of pancakes, vegetables and gravy inthis manner. Bake in a hot oven at 200 degree C(400 degree F) for 20minutes and serve hot.

 

Protein Pancakes

  • 2 Eggs
  • 1 scoops of Whey Isolate/Casein Powder (Any Flavour)
  • 1 teaspoon Baking powder
  • 250 mL of Milk (Almond Milk or any normal milk will do)
  1. 1. Place a non-stick tawa on the stove over medium heat.
  2. 2. In a large bowl, mix the eggs, protein powder, baking powder and milk to create the pancake batter.
  3. 3. Pour out the batter into the tawa. Flip when bubbles start to form on the top.
  4. 4. Serve with butter and enjoy!

Banana And Peanut Butter Smoothie

  • Banana – 1 (overripe and frozen overnight)
  • Peanut butter – 1 tbsp
  • Milk of choice – 1 cup (200ml)
  • Steel cut/rolled oats – 1 tbsp
  • Sweetner of choice – optional
  • Ice cubes – 4-5 nos
  1. Blend all the ingredients into a mixer and pour into a glass.
  2. Serve chilled!

Overnight Oats

  • Steel cut/rolled oats – 2-3 tbsp
  • Milk of choice – 1 cup (200ml)
  • Fruit of choice – 1 cup
  • Chia seeds – 1 tbsp
  • Almonds – 5
  1. Mix the oats and milk. Top with the fruits and seeds. Refrigerate overnight and enjoy it in the morning! It’s that easy!
  2. What is even better is that you can customise this the way you want to!

ONP Fruit Salad

  • Pomegranate pearls – 1 small cup
  • Almonds – 10 nos.
  • Orange slices – 3
  • Strawberries (sliced – 4-5 nos.)
  • Dragonfruit – 1 small cup (1/4 of the fruit)
  • Watermelon cubes – 1 small cup
  • Mint – few sprigs
  1. Cut all the required fruits. Add these one by one in a jar/box to form layers of fruits. Top with almonds or use the almonds in-between two fruit layers for an extra crunch.

You can use your desired fruits for this recipe.

 

Berry Smoothie

  • 1 cup frozen strawberries
  • 1 cup almond milk
  • Handful of ice cubes (4 or 5)
  • 1 apple
  • Handful of frozen blueberries
  • 1 1/2 cups Greek yogurt
  • Unsweetened flaked coconut (to garnish)
  1. In a high speed blender, blend all ingredients together until smooth. Add ice to the blender and blend or you can serve over ice in a glass. Enjoy immediately.

 

Yoda's Simple Muesli Bowl

  • Greek Yogurt/Hung Curd – 150 g
  • Strawberries (chopped – 3 to 4 nos)
  • Figs (chopped – 2 nos)
  • Muesli – 1 tbsp
  1. 1) Add 150 g of greek yogurt or hung curd to a bowl
  2. 2) Add the chopped strawberries and figs
  3. 3) Garnish it with muesli

Notes:

Greek Yogurt:
The suggested greek yogurt brand if you’re in India is Epigamia. Else, you can get your hands on any locally available greek yogurt.

Hung Curd:
If you can’t get your hand on greek yogurt, you can make your own hung curd at home. Just strain some curd over a muslin cloth and let sit overnight. It’s also a great source of protein.

Figs:
Fresh figs work best with Yoda’s Muesli Bowl

Muesli:
If you don’t prefer store bought muesli, it’s very easy to make it at home. But if you do buy it from the stores, be sure to read the labels.
